Cook pasta according to package directions, stirring occasionally, until al dente or softer depending on desired texture. While the pasta is cooking make the sauce as per directions below. To serve drain the pasta and toss through this delicious sauce.
Heat up a large fry pan and add sliced brown onion and olive oil and fry over medium heat for 5 minutes.
Add fresh tomatoes roughly chopped, 1 cup of white wine, diced garlic and salt and pepper and continue to cook for 10minutes stirring occasionally.
Add a can of diced tomato and passata.
Add Sicilian olives, fresh chilli and the tin of tuna in olive oil. Try to keep the tuna in big chunks and fold through the sauce until warmed through.
Add parsley, rocket and parmesan and serve with wholemeal pasta.
