3tbspextra virgin olive oil
1red onion
1tspchilli to taste
2garlic cloves
1tbspginger, grated
1cupmushroom, chopped
1large handful of sugar snap peas
1cupfrozen peas
1cupred capsicum cut into strips
600gtofu, firm, cut into bite size pieces
1tbsphoney
2tbspoyster sause
2tbspfish sauce
sesame seeds on top

Heat a wok over high heat. Add the oil and heat until just smoking, then add the onion, chilli, garlic and ginger and stir fry for 1 minute until the onion starts to soften.

Add the snow peas, sugar snap peas, frozen peas, mushrooms and capsicum and cook for two minutes until the peas are bright green.

Add the tofu and cook for 2 minutes until heated through.

Add 1 tablespoon of honey, 2 tablespoons of oyster sauce, 2 tablespoons of fish sauce, 1 tablespoon of sesame seeds and cook for another minute.

Serve with brown rice or soba noodles and sprinkle with fresh coriander leaves.
