We highly recommend that all our clients get comfortable with cooking and eating meals that don’t contain meat. It can be intimidating cooking tofu for the first time, but this recipe will show you the way!
3 tbsp extra virgin olive oil
1 red onion
1 tsp chilli to taste
2 garlic cloves
1 tbsp ginger, grated
1 cup mushroom, chopped
1 large handful of sugar snap peas
1 cup frozen peas
1 cup red capsicum cut into strips
600 g tofu, firm, cut into bite size pieces
1 tbsp honey
2 tbsp oyster sause
2 tbsp fish sauce
sesame seeds on top
1Heat a wok over high heat. Add the oil and heat until just smoking, then add the onion, chilli, garlic and ginger and stir fry for 1 minute until the onion starts to soften.
2Add the snow peas, sugar snap peas, frozen peas, mushrooms and capsicum and cook for two minutes until the peas are bright green.
3Add the tofu and cook for 2 minutes until heated through.
4Add 1 tablespoon of honey, 2 tablespoons of oyster sauce, 2 tablespoons of fish sauce, 1 tablespoon of sesame seeds and cook for another minute.
5Serve with brown rice or soba noodles and sprinkle with fresh coriander leaves.
GF - serve with brown rice. DF and LF.
