Sardines on toast

Packed with omega 3s and lots of brain loving vitamins and minerals sardines are a GREAT option to fill your guts! You might be scared about sardines, but put those fears to bed and give this a go!
 1 tsp extra virgin olive oil
 1 garlic clove, crushed
 pinch of chilli flakes
 1 lemon, zest and juice
 120 g sardines in extra virgin olive oil
 2 slices of brown bread
 ¼ red onion, sliced finely
 tomato, sliced
 basil leaves, chopped

Heat the olive oil in a frying pan, then sizzle the garlic and when fragrant add the lemon zest.

Add the sardines and heat through for a few minutes until warm.

Toast the brown bread. Add sliced tomato onto toast, add the sardines a squeeze of lemon juice, sprinkle red onion, add basil leaves and serve.
