This is one of our favourite ways to enjoy tomatoes! While roasting, they naturally sweeten and infuse with the flavours of the herbs and extra virgin olive oil. With the addition of the goats cheese and the crunch from the sour dough... oh lordy this recipe is a jaw dropper!
 3 tbsp extra virgin olive oil
 400 g mixed cherry tomatoes
 1 tbsp rosemary
 1 tbsp thyme
 1 tbsp basil, chopped
 100 g goats cheese
 salt and pepper
 seeded sourdough

Pre heat oven to 200°c.

In a baking dish, add tomatoes and whole garlic cloves and toss them with olive oil, fresh herbs, salt and pepper.

Roast for 15 minutes. Then toss and roast for another 15 minutes until tomatoes have blistered and caramelised.

Meanwhile brush sliced sourdough with olive oil and fry on pan or toast until crispy.

In a separate dish, break up goats cheese and put on the bottom of the dish.

Remove tomatoes from the oven, while piping hot, place them over the goats cheese.

Add chopped basil to the top.

Scoop the tomato and goats cheese mix on top of crispy sourdough and ENJOY!

Special dietary requirements - GF - serve with gluten free seeded sourdough, DF - remove feta and spread toast with avocado instead
