Pumpkin and chilli  fritters on salad

 3 Wildly Good pumpkin and chilli fritter bites
 2 cups mixed salad leaves
 1 grated carrot
 1 tomato, sliced
 1 tbsp extra virgin olive oil
 1 tsp balsamic vinegar

In a large shallow bowl for one place your mixed salad leaves, top with grated carrot and tomato and drizzle with olive oil and balsamic dressing.

You can use any combo of salad you like, just aim for at least three colours. Finely shredded purple cabbage looks and tastes amazing and is a great source of fibre and polyphenols which is super fuel for your gut bugs.

Heat fritters in the microwave for 45seconds and add to the top of the salad.
