Homemade Rustic Garlic Bread

Once you make this garlic bread you will never look back! As always the browner and grainier the bread the better BUT experiment and find what you like the most. We use any herbs from basil to oregano to thyme, rosemary or parsley. If you struggle with IBS reduce the garlic or slice your garlic and place it in oil to infuse for the day and remove the garlic before using the oil.
 1 loaf of rye sourdough (you can use any variety of bread you like)
  cup extra virgin olive oil
 8 garlic, cloves
 salt and pepper
 ¼ cup fresh herbs
 grease proof paper, double the length of the bread

Pre-heat the oven to 180°c.

Mix crushed garlic, oil, herbs, salt and pepper together in a small dish.

Using a bread knife cut slices of bread about two finger widths wide but don’t cut all the way through, leave the bottom of the bread intact.

Using a pastry brush, a spoon or even your fingers brush each slice of bread with the oil mixture. Make sure you get into all the nooks and crannies and drizzle any leftover oil over the top of the bread.

Wet the greaseproof paper and squeeze out any excess water. Wrap the bread tightly in the wet paper and put in the oven for 20-25 mins or until the bread is crusty on the outside.

Note: Using the damp paper makes the bread crusty on the outside and soft in the middle.
