PZZA BASE (or use wholemeal pitta bread)
300 g wholemeal plain flour
100 g oat bran
1 tbsp instant dried yeast
1 tsp salt
1 ½ tbsp extra virgin olive oil
1 cup luke warm water
TOPPINGS (Choose your favourites or follow ours)
Option 1) tomato passata (spread generously over the base with the back of a spoon), prosciutto, red onion, cherry tomato, basil leaves, mozzarella.
Option 2) two crushed garlic cloves in olive oil + tomato passata (spread generously over the base with the back of a spoon) ham, artichokes, mushroom, olives.
Option 3) ham, chopped zucchini, olives, cherry tomato, red onion, mushroom, basil leaves, baby spinach leaves, feta and grated mozzarella
Option 4) prawns (you can put them on raw) basil pesto, roasted capsicum, mozzarella, add a handful of fresh rocket once it’s cooked.
PIZZA BASE
1Mix yeast, salt, flour and oat bran using an electric mixer with a dough hook attachment. Or you can do it the old fashioned way and get your hands dirty.
2Mix water and 1½ tablespoons of extra virgin olive oil into dry ingredients for about 8 minutes or until the dough is smooth and elastic. If you’re doing this by hand you will need to do it for 10-15minutes.
3Grease a large bowl with olive oil and transfer the dough to this bowl and cover with cling wrap or a tea towel and allow to rise for about 1.5 hours. Knock back the dough, let it rise again (covered) for about 35-40minutes.
4Your dough is ready to be rolled and topped with your favourite toppings, see ours below.
GF - In a mixing bowl with a dough hook attachment (or a strong set of hands) mix salt, 400g of gluten free flour, 1.5 tablespoons of LSA and 1.5 tablespoons of psyllium husk and yeast in a large mixing bowl. Add 1 cup of water and 1/3 cup of extra virgin olive oil and mix until combined 2-4minutes. Leave to rise for 1-2 hours.
PIZZA TOPPINGS
5Choose your favourite!! Best cooked on a pizza stone in the BBQ – Get the barbie as hot as you can and cook with the lid down for around 15 mins.
To cook in the oven preheat the oven to 250°c or as hot as your oven goes and place a pizza tray or stone at the same time. Once oven is heated put pizza onto the hot tray and cook for 10-15minutes.
To serve -Serve with barbecued broccolini. Just drizzle with olive oil and a good crack of pepper and cook for 2 mins and turn and then cook for another 2 minutes.
