Rinse and slice mushrooms and chop cherry tomatoโs in half.

Turn fry pan on to high heat and drizzle with olive oil (around 2 teaspoons) add mushrooms and tomato, season with salt and pepper and fry till mushrooms reduce in size.

Put veggies onto a plate, take your pan off the heat (or turn the stove off) and toast your bread.

Put your fry pan back on the heat and fry the eggs as you like them (I'm a flipped, not a sunny side up girl!) . Add rocket and season to taste.

To serve put toast on a plate, add the avo and eggs on the toast and place mushrooms and veg on the side.
