Dumplings with broccolini and edamame

This is a Friday night favourite and is a meal we make instead of getting take away. Most take away doesn’t give you nearly enough veg but this one will! I’m a big fan of Diana Chans dumplings, from Coles or Woolworths but experiment and find your favourite. From a nutritional perspective these are a little high in fat but remember this will be far less fat than a take away.
 2 packets of dumplings - There are nine dumplings per packet – I usually serve six per person.
 2 bunches of broccolini
 1 cup edamame beans (already shelled)
 1 tbsp olive oil
 1 tbsp soy sauce
 1 tbsp sweet chilli sauce
 2 tsp sesame seeds

Follow cooking instructions on the dumplings packaging for pan frying.

While the dumplings are cooking boil the kettle, rinse your broccolini and trim the ends. Put edamame into a heat proof bowl.

Mix soy and sweet chilli sauce together in a small bowl.

Once dumplings are cooked remove them from the pan.

Cover the edamame with boiling water for 1 minute and drain.

Put some olive oil in the wok add the broccolini and stir fry for two minutes. Add the edamame to the broccolini, gently move around the pan for about 30 seconds, turn off the heat and pour over the soy sauce mix.

Divide dumplings and veggies between two plates, drizzle any remaining sauce over the veggies, sprinkle with sesame seeds and enjoy!
