One of the best recipes to serve to friends for a casual get-together using a lot of household herbs and spices. Also a great recipe to introduce red kidney beans into your diet.
Mexican Spice
 2 tsp cayenne pepper (depending how spicey you like it!)
 2 tsp garlic powder 
 2 tsp onion powder
 2 tsp oregano
 5 tsp cumin
 4 tsp paprika
The REST!
 1 tbsp extra virgin olive oil
 3 cloves garlic, crushed
 1 onion, finely diced
 1 red capsicum
 3 tomato paste
 2 beef stock cubes
 ½ cup water
 2 tins of tomato
 500 g beef mince
 400 red kidney beans (tinned)
To Serve
 Broccolini
 Coriander
 Lime, juice

Heat oil in a large saucepan over medium high heat. Add garlic and onion, cook for 1 minute, then add capsicum and cook for 2 minutes until onion is translucent.

Turn heat up to high and add beef. Cook, breaking it up as you go, until mostly browned.

Add 1 tbspn + 1 tspn of Mexican spice mix. Cook until beef is browned all over.

Add remaining ingredients plus 1/2 cup of water. Bring to simmer and cook uncovered for 20 to 40 minutes on medium low heat so it's bubbling gently.

Adjust salt and pepper to taste just before serving.

Serve with brown rice and broccolini. Pour boiling water over the broccolini for and let it sit for 2 minutes. Feel free to add some coriander, natural yoghurt or avocado, and a squeeze of lime juice.
