Avocado and edamame smash. Creamy, zesty, and a dash of spice, give this classic avocado favourite a new sense of life! Edamame beans (already shelled) can be found in the frozen section at your major supermarkets. Or you may find them whole at you local food market, where you'll need to get rockin and poppin!
1 avocado
⅓ edamame, shelled
1 lemon or lime, juiced and a wedge for serving
50 g feta
1 tbsp coriander or basil
fresh chilli slices or chilli flakes
2 thick slices of brown and grainy sourdough
20 ml extra virgin olive oil
eggs - optional
1Boil the kettle and put frozen edamame in to a bowl and cover with boiling water for 1-2 minutes and drain.
2In another bowl, scoop out the flesh of the avocado using a spoon and then add the lemon/lime juice and edamame and smash together with a fork. It will be lumpy, this is fine, you just want the ingredients combined.
3Brush your toast with olive oil and lightly toast it.
4Put on to plates, top with avocado mix and sprinkle with feta, coriander/basil and serve with a wedge of lemon or lime, salt and pepper. YUUUUMMMM.
GF - serve on gluten free toast, DF and LF - remove feta and add a dollop spicey tomato chutney or add 1/4 teaspoon wasabi to the avocado mix
