Rinse and pick off the coriander leaves.
Rinse and chop the tomatoes into small pieces.
Dice the red onion into tiny pieces.
Scoop flesh of avocados into a bowl and mash with a fork.
Add the coriander tomato and onion to the avocado. Using a fork squeeze over the juice of the lime and gently mix together.
Try not to eat immediately if you have guests, otherwise go for it!
