Sabrina’s Chicken

Finger Lickin' Spicy Chicken! You will make this once and it will quickly turn into a weekly staple!
 1 kg chicken thigh or breast, no skin  
 4 garlic cloves
 2 tbsp coriander root + stem chopped and smashed  
 ½ tsp salt
 1 tbsp castar sugar
 1 tsp turmeric
 1 tsp curry power
 2 tbsp fish sauce
 1 lime, juiced
 3 chillies, long
 black sesame seeds
 270 soba noodles or 2 cups of brown rice
 ½ cup coriander leaves to serve
Greens
 2 bunches of broccolini (bite size pieces)
 1 cup edamame beans

Pre heat oven to180°c.

If you have chicken breast cut chicken into thigh size pieces. Place chicken into a baking dish (it should be big enough so the chicken does not overlap, approx. 26cm x 22cm).

Add all the ingredients (not chicken, soba noodles or sesame seeds) together in a blender and wizz until it's well combined. Pour over the chicken and leave to marinate for at least 15-30 minutes (the longer the better).

Put the chicken in the oven and bake for 20 minute (or until chicken is cooked)

Meanwhile cook rice or soba noodles as per packet instructions.

Just before serving blanch the broccoli and edamame. You can do this by boiling the kettle and put the broccolini and edamame into a shallow bowl and cover with the boiling water for 2 minutes then drain.

Serve in large dish with brown rice or soba noodles on the bottom, pour over the chicken and it’s juices and place the greens on top with a sprinkle of black seasame seeds, coriander and chilli.
