 300 g steaks, remove fat (2 x 150g)
 1 tsp each of paprika, thyme and 1/2 tsp of black pepper mixed
 4 mushroom, large flat
 2 corn, cobs
 1 chilli, long
 ½ avocado
 2 cups broccoli or green beans
 ½ lime, fresh
 coriander

Combine paprika, pepper and thyme. In a bowl spray steaks with small amount of oil sprinkle with seasoning and mix well with clean hands.

Spray mushrooms and corn with olive oil.

Rinse and trim the broccolini, drizzle with 1 tablespoon of olive oil and season with salt and pepper.

Cut the avocado into two long wedges, place in a bowl and cover with lime juice and coriander.

The corn takes the longest to cook so place it on the BBQ first and cook for around 10mins turning regularly.

Leave the corn on the BBQ and add steaks, mushroom, broccolini and chilli on the BBQ (I like to seal the steak on one side i.e. just cook it until it’s brown then flip it over and cook it until you can see the juices come through the sealed side). Depending on the thickness of your steak this should take about 3 minutes each side. This should be long enough for your veggies to cook too.

Top the steak with avocado salsa and chilli. Serve with mushrooms, cobs of corn and broccolini on the side. YUM!

GF, LF and DF. V - serve with veggie burgers instead of steak.
