Dark Chocolate Chunk Cookies

Calling all cookie monsters! This recipe is full of fibre, polyphenols and antioxidants and smiles. Ready in under 30 minutes and good for your gut bugs and your taste buds, these cookies are sure to become a staple.
 1 cup Wholemeal Spelt Flour
 1 cup Rolled Oats
  cup LSA (Linseed, sunflower seeds and almond mix)
  cup Raw sugar
 ½ cup Extra Virgin Olive Oil
 2 tsp Vanilla Essence
 1 Egg
 2 tbsp Maple Syrup
 70 g 70% dark chocolate, chopped

Preheat oven to 180°c

Place flour, oats, LSA and sugar in a bowl and mix together

Mix the egg in a mug with a fork and then add to the dry ingredients along with the olive oil, vanilla and maple syrup

Fold through chopped up chocolate

Roll into golf sized balls and then squash slightly with the palm of your hand

Place on trays lined with baking paper and cook for 12-14 minutes.

Allow to cool before serving.
