1cupdates (chopped)
¼cupbeetroot (finely grated)
¼cupspinach (chopped, finely sliced)
1 ¼cupsalmond meal
1cupshredded coconut
2tbspchia seeds
½cupshredded coconut for rolling (*optional)

Place all ingredients into a high-speed food processor and process until smooth

Roll into golf size balls and then roll in the shredded coconut.

Place bliss balls in freezer and leave to set for 1 hour.
